Cold-Chain Logistics: Protecting Frozen Meat Quality from Plant to Port

A broken cold chain can turn a premium shipment into a total loss. Here's how professional exporters maintain -18 °C integrity across every link.

Temperature control is the single most important variable in frozen meat logistics. Once the chain breaks — even briefly — bacterial growth resumes, ice crystals damage muscle fibres, and product quality degrades irreversibly.

The cold-chain timeline

A typical export shipment moves through five stages, each with its own temperature risk:

  1. Blast freezing — product is frozen to -18 °C (or below) within hours of slaughter and cutting.
  2. Cold storage — maintained at -18 °C at the packing plant until shipment.
  3. Inland transport — refrigerated trucks move containers from plant to port.
  4. Port staging — the container waits at the terminal, plugged into shore power.
  5. Ocean transit — reefer containers maintain set-point temperature for 20–45 days depending on route.

Where breaks happen

The two highest-risk moments are:

  • Loading dock transfers — when product moves between cold storage and the truck or container. Dock seals and rapid loading minimize warm-air ingress.
  • Port power gaps — if a container is unplugged between inland delivery and vessel loading. Reputable ports maintain uninterrupted reefer power.

What importers should ask

  • What is the blast-freeze protocol? (Target core temperature and time)
  • Are temperature data loggers included in every container?
  • What is the port plug-in SLA?
  • Can you provide a temperature chart for the full transit?

Reefer container specs

Standard 40' high-cube reefers hold roughly 26–28 tonnes of frozen meat. They maintain set-point accuracy to ±0.5 °C and record temperature at intervals throughout the voyage. The data log is available to the receiver upon arrival.

Choosing an exporter with vertically integrated logistics — from their own cold stores to port — reduces the number of handoffs and the risk of temperature excursions.
